Woky Ko: Kaiju, situated on the level above Meatbox and Squeezed, serves a unique ramen menu as well as seasonal vegetable, fish and meat dishes cooked on a traditional Japanese robata grill.
The restaurant’s kitchen is lead by head chef John Watson who joins from running his own restaurant, No Man’s Grace on Chandos Road. Prior to this he was head chef at The Gallimaufry and worked at Casamia and The Kensington Arms.
The inspiration for the restaurant is Japanese Izakaya - an informal dining style where diners can enjoy drinks and dishes, with Kaiju serving meat, fish and vegetables, seared over the specialist Binchotan charcoal producing a unique flavour from the robata grill. As well as a selection of Japanese-style ramen with toppings cooked over coal, the menu will also feature ferments, a soy sauce based house glaze called tare flavouring the meat dishes, seasonal fish and vegetables from producers such as Wild Harbour and Grow Bristol.
